Ingredients
  

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1 cup powdered sugar, sifted
1 large egg
1 teaspoon peppermint extract
1/4 cup crushed peppermint candies (plus extra for garnish)
Red and green food coloring
1 cup semi-sweet chocolate chips (for drizzle, optional)

Method
 

Prepare the Dough: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, beat the softened butter and powdered sugar together until creamy. Add the egg and peppermint extract, mixing until well combined.
    Combine Ingredients: Gradually add the dry flour mixture to the wet ingredients until fully incorporated. Split the dough into three equal parts.
      Color the Dough: In one part, mix in a few drops of red food coloring until you reach your desired shade. In another part, mix in drops of green food coloring, and leave the third part uncolored.
        Roll Out the Dough: On a lightly floured surface, roll out each colored dough into 1/4-inch thick rectangles (about 10x8 inches). Ensure they are of equal size.
          Layer and Roll: Place the uncolored dough layer on top of the green layer, then place the red layer on top of the green layer. Press gently to adhere. Starting from one end, tightly roll the layered dough into a log, ensuring that the colors spiral beautifully.
            Chill the Dough: Wrap the dough log in plastic wrap and refrigerate for at least 1 hour until firm.
              Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
                Slice the Cookies: Remove the dough log from the refrigerator and slice it into 1/4-inch thick rounds. Place them on the prepared baking sheet, spacing them a couple of inches apart.
                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
                    Optional Chocolate Drizzle: Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Drizzle over the cooled cookies and sprinkle with extra crushed peppermint candies.
