Zest of 2 lemons

1 cup granulated sugar

4 large eggs

1/2 cup unsalted butter, cut into small pieces

A pinch of salt

Prepare Your Ingredients: Begin by zesting the lemons and then juicing them. Strain the juice to remove any seeds or pulp, and set aside.

    Combine Ingredients: In a medium-sized, heatproof mixing bowl, whisk together the granulated sugar, lemon zest, and salt.

      Add Eggs: Crack the eggs into the bowl with the sugar mixture and whisk until well combined and smooth.
