1 ½ cups all-purpose flour

1 cup plain Greek yogurt

3 medium ripe peaches, peeled and diced

¾ cup granulated sugar

½ cup unsalted butter, softened

3 large eggs

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ tsp ground cinnamon (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

    Prepare the Batter: In a large bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes using an electric mixer.

      Add Eggs and Yogurt: Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the Greek yogurt and vanilla extract until smooth.

        Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, salt, and ground cinnamon (if using). Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.

          Fold in Peaches: Gently fold the diced peaches into the batter, taking care not to overmix.

            Pour and Bake: Pour the cake batter into the prepared cake pan, smoothing the top. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

              Cool the Cake: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
