Ingredients

12 mini sweet bell peppers

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup cooked bacon, chopped

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Peppers: Wash the mini sweet bell peppers and slice them in half lengthwise. Remove any seeds and membranes.

Make the Filling: In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped bacon, green onions, garlic powder, smoked paprika, and black pepper. Mix until well combined and creamy.

Stuff the Peppers: Use a spoon or a piping bag to fill each half of the mini sweet bell peppers with the cheese and bacon mixture, generously mounding the filling.

Bake Your Peppers: Arrange the stuffed peppers on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the filling is golden and bubbly.

Garnish and Serve: Once done, remove the peppers from the oven and let them cool for a few minutes. Sprinkle with fresh parsley for a pop of color. Serve warm and watch them disappear!
