2 cups ripe watermelon, cubed and seeds removed

1 cup sparkling water or club soda

2 tablespoons simple syrup (adjust to taste)

1 tablespoon freshly squeezed lime juice

Crushed ice

Fresh mint leaves for garnish

Watermelon slices for garnish (optional)

Prepare the Watermelon Puree: In a blender, add the cubed watermelon and blend until smooth. Strain the puree through a fine mesh sieve into a bowl to remove any pulp. You should have about 1 cup of watermelon juice.

    Mix the Base: In a pitcher or large glass, combine the watermelon juice, simple syrup, and lime juice. Stir well to incorporate all the flavors.
