1 medium seedless watermelon

1 tablespoon lime juice

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon chili powder (optional for a spicy kick)

1/2 cup plain Greek yogurt

1/4 cup coconut cream

1 tablespoon maple syrup

1 teaspoon vanilla extract

Fresh mint leaves for garnish (optional)

Instructions
 

Start by cutting the watermelon. Slice the watermelon in half lengthwise, then cut each half into quarters. Gently scoop out the flesh, leaving a small amount of the rind to hold the shape.

    Cut the watermelon flesh into fries by slicing them into long, thin sticks about 1/2 inch wide.

      In a small bowl, mix together the lime juice, honey, and chili powder (if using). Drizzle this mixture over the watermelon fries and toss gently to coat.

        For the sweet fruit dip, combine the Greek yogurt, coconut cream, maple syrup, and vanilla extract in a bowl. Whisk until smooth and creamy.

          Arrange the watermelon fries on a serving platter and garnish with fresh mint leaves if desired.
