Wagyu Burger Recipe

Ingredients
  

1 lb Wagyu beef (preferably with a good fat content, around 80/20)

4 brioche burger buns

4 slices aged cheddar cheese

1 cup arugula

1 large heirloom tomato, sliced

1/2 red onion, thinly sliced

4 tbsp garlic aioli (store-bought or homemade)

1 tbsp Worcestershire sauce

Salt, to taste

Freshly ground black pepper, to taste

Butter, for toasting buns

Instructions
 

Prepare the Beef: In a large bowl, gently combine the Wagyu beef with Worcestershire sauce, and a pinch of salt and pepper. Be careful not to overwork the meat, as you want to preserve its tenderness and flavor.

    Form Patties: Divide the beef mixture into 4 equal portions and form them into patties, slightly larger than the buns, as they will shrink as they cook. Make a small indent in the center of each patty to ensure even cooking.

      Preheat the Grill: Preheat your grill or a cast-iron skillet over medium-high heat. If using a skillet, add a small amount of oil to prevent sticking.

        Cook the Patties: Place the patties on the grill or skillet and cook for about 4 minutes on one side. Flip the patties, place a slice of aged cheddar on top, and cook for another 3-4 minutes or until they reach your desired doneness (medium-rare is recommended for Wagyu).

          Toast the Buns: While the patties are finishing, spread butter on the cut sides of the brioche buns and toast them on the grill or in a separate skillet until golden brown.

            Assemble the Burgers: Spread 1 tablespoon of garlic aioli on the bottom half of each toasted bun. Place the Wagyu cheeseburger patty on top, followed by a handful of arugula, a slice of heirloom tomato, and some red onion slices.

              Serve & Enjoy: Cap the burgers with the top half of the buns and serve immediately, accompanied by your favorite sides like sweet potato fries or a fresh salad.
