1 cup buttermilk

1 tablespoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

2 cups corn kernels (fresh, canned, or frozen)

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon lime juice

1 teaspoon chili powder

1/4 cup crumbled cotija cheese

1/4 cup chopped cilantro

Salt and pepper to taste

For the Tacos:

8 small corn tortillas

Lime wedges (for serving)

Extra cotija cheese and cilantro (for garnish)

Marinate the Chicken: In a bowl, combine buttermilk and hot sauce. Add chicken thighs and ensure they are well-coated. Cover and marinate in the refrigerator for at least 1 hour or preferably overnight.

    Prepare the Fried Chicken: In a large bowl, whisk together flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Heat oil in a deep skillet or fryer over medium-high heat (around 350°F).

      Coat the Chicken: Remove marinated chicken from the refrigerator. Shake off excess buttermilk and dredge the chicken thighs in the seasoned flour mixture, pressing down to ensure an even coating.
