1.5 lbs ground turkey

1 cup mushrooms, finely diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp fresh thyme, chopped

1 tsp fresh rosemary, chopped

1 cup spinach, wilted

8 oz cream cheese, softened

1 sheet of puff pastry (thawed)

1 egg (beaten)

Salt and pepper to taste

1 cup cooked cranberry sauce (for serving)

1 tbsp olive oil

1 tbsp Dijon mustard

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions, minced garlic, and finely diced mushrooms. Sauté until the onions are translucent and the mushrooms have released their moisture, about 5-7 minutes.

      Cook the turkey: Add the ground turkey to the skillet along with the thyme, rosemary, salt, and pepper. Cook until the turkey is browned and cooked through, about 8-10 minutes. Stir in the wilted spinach and cream cheese until well combined. Remove from heat and let it cool.

        Prepare the pastry: On a floured surface, roll out the puff pastry sheet to a rectangular shape that can enclose the turkey filling.

          Assemble the Wellington: Spread a thin layer of Dijon mustard on the puff pastry. In the center of the pastry, spoon the cooled turkey mixture—shape it into a loaf.

            Wrap it up: Carefully fold the pastry over the filling, pinching the seams to seal it securely. You can trim any excess pastry if necessary. Place it seam-side down on a baking sheet lined with parchment paper.

              Egg wash: Brush the top of the pastry with the beaten egg to give it a beautiful golden color when baked.

                Bake: Bake in the preheated oven for about 25-30 minutes or until the pastry is puffed and golden brown.

                  Serve: Let the Wellington rest for 10-15 minutes before slicing. Serve warm with a side of cranberry sauce. Enjoy!
