2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 carrot, diced

4 cups ripe tomatoes, chopped (or 2 cans of diced tomatoes)

3 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup fresh basil leaves, packed

2 tablespoons pine nuts (toasted)

1/4 cup grated Parmesan cheese

1/4 cup extra virgin olive oil

Instructions
 

In a large pot, heat the olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until soft and translucent.

    Add the minced garlic and diced carrot to the pot. Cook for another 3-4 minutes until the carrot begins to soften.

      Stir in the chopped tomatoes (or canned diced tomatoes), vegetable broth, dried basil, dried oregano, salt, and pepper. Bring the mixture to a simmer.

        Cover and let the soup simmer for about 20-25 minutes, allowing the flavors to meld together. Stir occasionally.

          While the soup is simmering, prepare the pesto. In a food processor, combine the fresh basil leaves, toasted pine nuts, grated Parmesan cheese, and extra virgin olive oil. Blend until smooth. Adjust seasoning with salt, if necessary.

            Once the soup is done, use an immersion blender to puree it until smooth. If you prefer a chunkier texture, blend just half of the soup.

              Serve the tomato soup hot, drizzling a generous spoonful of basil pesto on top of each bowl. Garnish with additional basil leaves and a sprinkle of Parmesan cheese, if desired.
