1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

For the peach filling:

4 cups fresh peaches, peeled and sliced

½ cup sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

For the cheesecake layer:

16 oz cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

For the crumble topping:

¾ cup flour

½ cup brown sugar

½ cup rolled oats

¼ cup unsalted butter, softened

1 teaspoon cinnamon

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until slightly golden. Remove and let cool.

    Cook the peach filling: In a medium saucepan over medium heat, combine sliced peaches, sugar, lemon juice, vanilla extract, and cornstarch. Stir occasionally until the peaches are soft and the mixture slightly thickens, about 5-7 minutes. Remove from heat and let cool slightly.

      Make the cheesecake layer: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar and vanilla extract, mixing until well blended. Add the eggs one at a time, mixing on low speed just until combined. Finally, stir in the sour cream until smooth.
