For the Peach Filling:

4 large ripe peaches, pitted and sliced

2 tablespoons honey or maple syrup (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 tablespoons cornstarch (for thickening)

For the Crumble Topping:

1 cup rolled oats

1/2 cup almond flour

1/4 cup coconut oil, melted (can substitute with unsweetened applesauce for a lower-fat version)

1/4 cup walnuts or pecans, chopped (optional)

1 tablespoon brown sugar or coconut sugar (optional)

1 teaspoon cinnamon

1/4 teaspoon salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling:

      - In a large bowl, combine the sliced peaches, honey or maple syrup, lemon juice, vanilla extract, cinnamon, and cornstarch.

        - Gently toss the mixture until the peaches are well coated. Pour this mixture into a greased 8-inch square baking dish or a similar-sized oven-safe dish.

          Make the Crumble Topping:

            - In a separate bowl, combine rolled oats, almond flour, melted coconut oil, walnuts or pecans (if using), brown sugar or coconut sugar (if desired), cinnamon, and salt. Mix thoroughly until the ingredients are well combined and crumbly.

              Assemble:

                - Evenly spread the crumble topping over the peach filling in the baking dish. Make sure to cover the peaches completely for an even bake.

                  Bake:

                    - Bake in the preheated oven for about 30-35 minutes, or until the topping is golden brown and the peach filling is bubbling through.

                      Serve:
