4 large Russet potatoes, peeled and thinly sliced

2 cups heavy cream

1 cup whole milk

3 cloves garlic, minced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/4 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons unsalted butter, for greasing the baking dish

Instructions
 

Preheat your oven to 350°F (175°C).

    Grease a 9x13 inch baking dish with the unsalted butter.

      In a large mixing bowl, combine the heavy cream, whole milk, minced garlic, thyme, rosemary, salt, and pepper, and stir well.

        Layer one-third of the sliced potatoes in the bottom of the prepared dish. Pour one-third of the cream mixture over the potatoes, and then sprinkle one-third of the cheddar and Gruyère cheese mix over the top.

          Repeat the layering process two more times with the remaining potatoes, cream mixture, and cheeses, making sure to keep the last layer with more cheese on top.

            Cover the baking dish with aluminum foil to prevent burning and to allow the potatoes to cook evenly. Bake in the preheated oven for about 1 hour.

              After 1 hour, remove the foil and sprinkle the grated Parmesan cheese over the top. Bake uncovered for an additional 20-25 minutes, or until the potatoes are tender and the cheese is golden and bubbly.

                Allow the scalloped potatoes to rest for about 10 minutes before serving. This will help the layers set and make it easier to serve.
