1 pound boneless, skinless chicken thighs or breasts

1 cup fresh pineapple chunks (or canned, drained)

1 bell pepper, sliced (any color)

1 small red onion, sliced

½ cup teriyaki sauce

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper, to taste

Cooked rice, for serving (optional)

Sesame seeds and chopped green onions, for garnish

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C).

    Prepare the Chicken: In a bowl, combine the teriyaki sauce, olive oil, garlic powder, ground ginger, salt, and pepper. Add the chicken and toss to coat it thoroughly in the marinade. Let it marinate for at least 15 minutes for the flavors to meld.

      Prepare Foil Packets: Cut large sheets of aluminum foil (about 12x18 inches). Create a bowl-like shape with the foil by folding up the edges, ensuring it is well-sealed to prevent leaking.

        Assemble the Packets: Place even amounts of the marinated chicken in the center of each foil packet. Top with pineapple chunks, sliced bell pepper, and red onion.

          Seal the Packets: Fold the edges of the foil together to create tightly sealed packets, making sure there are no holes for juices to escape.

            Cook the Packets: Place the packets directly on the preheated grill or in the oven. If grilling, cook for 20-25 minutes, and if in the oven, bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Serve: Carefully remove the packets from the grill or oven (they will be hot!). Open the packets cautiously as steam will escape. Serve the chicken and vegetables over cooked rice, garnished with sesame seeds and chopped green onions.
