Ingredients
  

1 lb ground beef or turkey

1 cup elbow macaroni

1 can (15 oz) diced tomatoes with green chilies

1 cup beef broth

1 packet taco seasoning

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup black beans (drained and rinsed)

1/2 cup corn (canned or frozen)

1/2 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions
 

In a large skillet or pot, brown the ground beef or turkey over medium heat, breaking it up into small pieces as it cooks. Season with garlic powder, onion powder, salt, and pepper.

    Once the meat is fully cooked, drain any excess fat. Stir in the taco seasoning, diced tomatoes with their juices, beef broth, and macaroni. Bring to a boil.

      Reduce the heat to low, cover, and let it simmer for about 8-10 minutes, or until the macaroni is cooked. Stir occasionally to prevent sticking.

        Once the macaroni is tender, stir in the black beans, corn, and sour cream. Mix well until everything is heated through.

          Remove from heat and fold in the shredded cheddar cheese. Let it sit for a few minutes to allow the cheese to melt and the dish to thicken slightly.

            Serve hot, garnished with chopped green onions on top.
