Ingredients
  

200g dried Chinese wheat noodles (or any preferred noodles)

4 tablespoons soy sauce

2 tablespoons black vinegar (or rice vinegar)

1 tablespoon sugar

1 tablespoon sesame oil

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 tablespoons chili flakes (adjust to taste)

1 teaspoon Sichuan peppercorns (optional, for more authentic flavor)

2-3 green onions, chopped

Fresh cilantro, for garnish

Toasted sesame seeds, for garnish

Instructions
 

Cook the Noodles: In a large pot of boiling water, cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix together soy sauce, black vinegar, sugar, and sesame oil. Stir until sugar is dissolved and set aside.

      Make the Garlic Chili Oil: In a small saucepan, heat vegetable oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute), being careful not to let it burn. Remove from heat and add the chili flakes and Sichuan peppercorns (if using). Allow the mixture to cool slightly.

        Combine Noodles and Sauce: In a large mixing bowl, toss the cooked noodles with the prepared sauce until they are evenly coated.

          Add Chili Oil: Drizzle the garlic chili oil over the noodles, reserving some for drizzling on top before serving. Toss well to combine, ensuring each noodle is coated with the spicy oil.

            Garnish and Serve: Transfer the spicy noodles to serving bowls. Top with chopped green onions, fresh cilantro, and toasted sesame seeds. Add more garlic chili oil for an extra kick if desired.
