1 cup mashed sweet potatoes (about 1 medium sweet potato)

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon (optional)

2 large eggs

1 cup milk (dairy or non-dairy)

1/4 cup melted butter or vegetable oil

1 cup corn kernels (fresh or frozen)

1/2 cup shredded cheddar cheese (optional for savory flavor)

Instructions
 

Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the mashed sweet potatoes, cornmeal, all-purpose flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon. Stir until well mixed.

      In another bowl, whisk together the eggs, milk, and melted butter (or oil) until well combined.

        Pour the wet ingredients into the dry ingredients and mix until just combined; avoid overmixing to keep the cornbread tender.

          Gently fold in the corn kernels and cheddar cheese (if using) until evenly distributed throughout the batter.

            Pour the batter into the prepared baking dish, spreading it evenly.

              Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean and the edges are lightly golden.

                Allow the cornbread bars to cool in the pan for about 10 minutes before cutting them into squares or bars.
