4 large sweet potatoes, peeled and cubed

½ cup brown sugar

½ cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

½ cup unsalted butter, melted

2 large eggs

1 cup milk

1 cup mini marshmallows (or pecans for a nutty option)

1 cup gluten-free oats (optional)

¼ cup maple syrup (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until fork-tender, about 15-20 minutes. Drain and mash until smooth.

      Mix Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, salt, melted butter, eggs, and milk. Mix until all ingredients are well incorporated and the mixture is creamy.

        Prepare the Casserole Dish: Grease a 9x13 inch baking dish with cooking spray or a little butter. Pour the sweet potato mixture into the dish and spread it evenly.

          Add Toppings: If you're using oats, sprinkle them evenly over the top of the sweet potato mixture. Then, add mini marshmallows or chopped pecans as desired for extra texture and flavor.
