Preheat the Oven: Preheat your oven to 375°F (190°C).
Cook the Sweet Potatoes: In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook until fork-tender, about 15-20 minutes. Drain and mash until smooth.
Mix Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, salt, melted butter, eggs, and milk. Mix until all ingredients are well incorporated and the mixture is creamy.
Prepare the Casserole Dish: Grease a 9x13 inch baking dish with cooking spray or a little butter. Pour the sweet potato mixture into the dish and spread it evenly.
Add Toppings: If you're using oats, sprinkle them evenly over the top of the sweet potato mixture. Then, add mini marshmallows or chopped pecans as desired for extra texture and flavor.
Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and marshmallows or pecans are toasted.
Drizzle with Maple Syrup: Once removed from the oven, drizzle maple syrup over the top while it’s still warm.
Serve: Let it cool for a few minutes before serving. This casserole pairs excellently with roasted turkey or ham for your festive meal!
