Ingredients
  

2 medium sweet potatoes, diced

1 red bell pepper, chopped

1 small onion, diced

2 cloves garlic, minced

1 cup fresh spinach

4 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Avocado slices (for serving)

Instructions
 

Prepare the Sweet Potatoes:

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt, pepper, smoked paprika, and cumin. Cook for about 5-7 minutes, stirring occasionally, until they start to soften and get a little crispy.

      Sauté the Vegetables:

        Push the sweet potatoes to one side of the skillet. In the empty space, add the remaining tablespoon of olive oil. Sauté the onion, red bell pepper, and garlic for about 3-4 minutes until they soften and become fragrant. Mix everything together in the skillet and cook for an additional 2-3 minutes.

          Add Spinach:

            Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

              Cook the Eggs:

                Meanwhile, in a separate small skillet, fry the eggs to your preference (sunny-side-up, over-easy, etc.).

                  Combine and Serve:

                    Once the hash is cooked, adjust seasoning if necessary. Plate the sweet potato breakfast hash and top each serving with a fried egg. Garnish with fresh chopped parsley and, if desired, avocado slices on the side.
