2 slices of sourdough bread

2 tablespoons olive oil

1 cup shredded mozzarella cheese

1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)

1/4 cup fresh basil leaves, chopped

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon balsamic glaze (optional)

Prepare the Bread: Brush one side of each slice of sourdough bread with olive oil. This will create a crispy, golden crust while grilling.

    Make the Filling: In a bowl, combine the shredded mozzarella cheese, sun-dried tomatoes, chopped basil, garlic powder, salt, and pepper. Mix well until evenly combined.

      Assemble the Sandwich: Place one slice of bread, oil-side down, onto a clean surface or cutting board. Spread the cheese and sun-dried tomato mixture evenly over the bread. If desired, drizzle a little balsamic glaze over the cheese mix for added flavor.

        Top It Off: Place the second slice of bread on top, oil-side up, to complete the sandwich.

          Grill the Sandwich: Preheat a non-stick skillet over medium heat. Carefully place the assembled sandwich onto the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. If you want an extra crispy texture, press down on the sandwich gently with a spatula while it cooks.

            Serve: Once the grilled cheese is ready, remove from the skillet, slice in half, and serve warm. Pair with a side of tomato soup or a fresh salad for a delightful meal!
