In a medium bowl, combine the sliced strawberries with 1/4 cup of the sugar. Toss to coat and let them sit for about 30 minutes to macerate. This will draw out their juices and intensify the flavor.
Once the strawberries are ready, use a fork or a potato masher to gently mash the strawberries to your desired chunkiness. Set aside.
In a large mixing bowl, whisk together the remaining 1/2 cup of sugar with the heavy cream, whole milk, vanilla bean seeds, vanilla extract, and a pinch of salt until the sugar is fully dissolved.
Stir the mashed strawberries into the cream mixture, ensuring they are evenly distributed.
Cover the bowl and refrigerate the mixture for at least 2 hours, or until it is thoroughly chilled.
Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions (typically around 20-25 minutes) until it reaches a soft-serve consistency.
Transfer the ice cream to a freezer-safe container, spreading it evenly. For a smoother texture, press a piece of plastic wrap directly onto the surface of the ice cream before sealing the container.
Freeze for at least 4 hours, or until firm.
When ready to serve, scoop the ice cream into bowls or cones and enjoy the luscious strawberry vanilla treat!
