Strawberry Mousse with Strawberry Sauce

Ingredients
  

2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar (divided)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon gelatin powder

2 tablespoons cold water

Strawberry Sauce:

1 cup fresh strawberries, hulled

2 tablespoons sugar

1 tablespoon lemon juice

Instructions
 

Prepare the Mousse:

    - In a mixing bowl, blend the 2 cups of sliced strawberries with 2 tablespoons of granulated sugar and the lemon juice until smooth. Strain the mixture to remove seeds if desired.

      - In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for about 5 minutes.

        - Gently heat the gelatin mixture in the microwave for about 10-15 seconds or until dissolved, ensuring it doesn’t boil. Stir this into the strawberry puree.

          - In another bowl, whip the heavy cream with the remaining 2 tablespoons of granulated sugar and vanilla extract until soft peaks form.

            - Fold the whipped cream into the strawberry puree until well combined.

              - Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours until set.

                Make the Strawberry Sauce:

                  - Blend the cup of fresh strawberries, sugar, and lemon juice together until smooth.

                    - You can strain the sauce for a smoother texture or leave it as is for a chunkier version.

                      - Refrigerate the sauce until ready to serve.

                        Assemble and Serve:

                          - Once the mousse has set, remove from the fridge.

                            - Top each serving of mousse with the strawberry sauce just before serving. Garnish with whole strawberries or mint leaves if desired.
