2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

Optional: extra strawberries for garnish, mint leaves for decoration

Instructions
 

Prepare the Strawberries: In a medium bowl, combine sliced strawberries with a tablespoon of powdered sugar. Gently toss and set aside for about 10-15 minutes to macerate. This will release some juices and enhance the flavor.

    Make the Whipped Cream: In another bowl, whisk the heavy whipping cream, remaining powdered sugar, and vanilla extract until soft peaks form. Be careful not to overwhip; it should still be smooth and creamy.

      Layer the Cake: In a 9x9 inch baking dish, create the first layer by spreading a thin layer of whipped cream on the bottom. Then, add a layer of graham cracker crumbs followed by a layer of macerated strawberries. Repeat the layers (whipped cream, graham crackers, strawberries) until you run out of ingredients, finishing with a layer of whipped cream on top.

        Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to meld and the cake to set.

          Serve: Before serving, decorate the top with additional fresh strawberries and mint leaves if desired. Cut into squares and enjoy!
