Strawberry Cheesecake Truffle Balls

1 cup fresh strawberries, hulled and chopped

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup graham cracker crumbs

1/2 cup white chocolate chips

1 tbsp coconut oil (for melting chocolate)

Optional: additional graham cracker crumbs for coating

In a medium bowl, mash the chopped strawberries with a fork until somewhat smooth, leaving some chunks for texture.

    In another bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

      Add the powdered sugar and vanilla extract to the cream cheese, and mix well until fully incorporated.

        Gently fold in the mashed strawberries into the cream cheese mixture until combined.

          Gradually add the graham cracker crumbs, mixing until a thick mixture forms that holds together well.

            Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the truffle balls on a parchment-lined baking sheet.

              Freeze the truffle balls for about 30 minutes or until they are firm.

                Meanwhile, melt the white chocolate chips and coconut oil together in a microwave-safe bowl in 20-second intervals, stirring until completely smooth.

                  Once the truffle balls are firm, dip each one into the melted white chocolate, allowing excess to drip off, and place back on the parchment-lined baking sheet.

                    If desired, sprinkle additional graham cracker crumbs on top of the chocolate before it sets.

                      Return the truffles to the freezer for about 10 minutes to harden the chocolate.
