Ingredients

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup buttermilk

1 large egg

2 tbsp melted butter

1 tsp vanilla extract

Vegetable oil for frying

For the Cheesecake Filling:

4 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp vanilla extract

2 tbsp strawberry puree (fresh or store-bought)

Fresh strawberries, chopped (for garnish)

Instructions

Make the Dough: In a bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients: In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well combined.

Mix Together: Pour the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; it should be slightly lumpy.

Prepare for Frying: Heat 2-3 inches of vegetable oil in a deep pot over medium heat until it reaches 350°F (175°C).

Fry the Donut Holes: Using a small cookie scoop or your hands, form the dough into small balls (about 1 inch in diameter). Carefully drop them into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes until golden brown, turning occasionally.

Drain and Cool: Remove the donut holes from the oil and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly.

Make the Filling: In a bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and strawberry puree until smooth. Adjust the thickness with more powdered sugar if necessary.

Stuff the Donuts: Once the donut holes are cool, use a small piping bag or a zip-top bag with a corner snipped off. Insert the tip into the center of each donut hole and fill with the cheesecake mixture until you see a bit of it oozing out.

Finish and Garnish: Roll the stuffed donut holes in granulated sugar for a sweet finish. Garnish with chopped fresh strawberries on top.
