Make the Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the finely chopped strawberries. Place the mixture in the freezer for about 30 minutes to firm up.

    Prepare the Cookie Dough: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
