1 cup fresh strawberries, hulled and sliced

2 ripe bananas, sliced

1/2 cup granulated sugar

1/3 cup cornstarch

1/4 teaspoon salt

2 3/4 cups whole milk

3 large egg yolks

2 teaspoons pure vanilla extract

1 cup heavy cream

1 tablespoon powdered sugar

1/2 teaspoon vanilla extract (for whipped cream)

10-12 vanilla wafers (optional, for layering)

Extra strawberry and banana slices for garnish

Prepare the Fruit: In a bowl, combine the sliced strawberries and bananas. Set aside. This mixture will add a fruity layer to your pudding.

    Make the Pudding Base: In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the milk until well combined. Heat the mixture over medium heat, stirring constantly until it begins to thicken (about 5-7 minutes).

      Temper the Eggs: In a separate bowl, whisk the egg yolks until smooth. Once the milk mixture is thick, gradually pour a little of it into the yolks to temper them (this prevents curdling). Stir continuously, then add the yolk mixture back into the saucepan.

        Finish the Pudding: Continue cooking on low heat for another 2-3 minutes, stirring constantly until it’s creamy and smooth. Remove from heat and stir in the vanilla extract. Transfer to a bowl and cover with plastic wrap, ensuring it touches the surface to prevent a skin from forming. Chill for at least 1 hour.

          Prepare the Whipped Cream: In a mixing bowl, beat the heavy cream with powdered sugar and 1/2 teaspoon of vanilla extract until soft peaks form.

            Assemble the Pudding: Once the pudding has cooled, layer it in serving dishes. Start with a layer of pudding at the bottom, then add a layer of the strawberry-banana mixture, followed by a dollop of whipped cream. Optional: Add a layer of vanilla wafers for extra texture. Repeat layers until all ingredients are used, finishing with whipped cream on top.

              Garnish and Serve: Top the final layer of whipped cream with extra slices of strawberries and bananas. Chill for another 30 minutes before serving for the best flavor and texture.
