6 large eggs

1 cup fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

1/2 cup onion, diced

1/2 cup bell pepper, diced (any color)

1/2 cup shredded cheese (cheddar, feta, or goat cheese)

1/4 cup milk (or a dairy alternative)

2 tablespoons olive oil

Salt and pepper to taste

Fresh herbs (like parsley or basil) for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until they soften.

      Add Mushrooms: Add the sliced mushrooms to the skillet and continue to sauté for another 5-6 minutes until the mushrooms are tender and lightly browned.

        Incorporate Spinach: Stir in the chopped spinach and cook until wilted, around 2 minutes. Remove the skillet from heat.

          Whisk Eggs: In a mixing bowl, whisk the eggs, milk, salt, and pepper until well combined.

            Combine: Pour the egg mixture over the sautéed vegetables in the skillet. Gently lift and stir the vegetables to ensure they’re evenly distributed.

              Add Cheese: Sprinkle the shredded cheese on top of the egg mixture.

                Bake: Place the skillet in the preheated oven and bake for 20-25 minutes or until the frittata is set and golden on the edges. A toothpick should come out clean when inserted in the center.

                  Cool & Serve: Once cooked, remove from the oven and let cool for a few minutes. Slice into wedges and garnish with fresh herbs before serving.
