Ingredients
  

2 cups sushi rice

2 1/2 cups water

1/2 cup rice vinegar

2 tablespoons sugar

1 teaspoon salt

1 lb fresh salmon fillet (skinless)

1 tablespoon vegetable oil

3 tablespoons mayonnaise (preferably Japanese mayo)

2 tablespoons Sriracha sauce (adjust for spice level)

1 tablespoon soy sauce

1 teaspoon sesame oil

1/4 cup chopped green onions

1 avocado, sliced

1 sheet nori (seaweed), cut into strips

Toasted sesame seeds for garnish

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water in a fine mesh strainer until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice: In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low until sugar dissolves. Transfer the cooked rice to a large bowl and drizzle the vinegar mixture over it. Gently fold with a spatula to combine. Allow it to cool.

      Cook the Salmon: Preheat your oven to 375°F (190°C). Heat the vegetable oil in a skillet over medium-high heat. Season the salmon with salt and cook for about 2-3 minutes per side, or until just cooked through. Remove and let cool slightly, then flake into bite-sized pieces.

        Make the Spicy Sauce: In a bowl, mix together the mayonnaise, Sriracha, soy sauce, and sesame oil until smooth. Add the flaked salmon and half of the green onions to the sauce, mixing until well coated.

          Assemble the Bake: In a greased baking dish (about 9x9 inches), spread the seasoned sushi rice evenly at the bottom. Layer the spicy salmon mixture on top of the rice, spreading it out evenly.

            Bake: Place the baking dish in the preheated oven and bake for about 15-20 minutes, or until the top is slightly golden and bubbly.

              Serve: Remove the sushi bake from the oven and let it cool for a few minutes. Top with sliced avocado, remaining green onions, and sprinkle with toasted sesame seeds. Cut into squares and serve with nori strips for wrapping.
