1 cup canned chickpeas, rinsed and drained

1 small head of cauliflower, cut into small florets

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust for spice)

Juice of 1 lime

Zest of 1 lime

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat tortillas or wraps

1 avocado, sliced

1 cup shredded red cabbage

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, chili powder, smoked paprika, cayenne pepper, garlic powder, lime juice, lime zest, salt, and pepper until well coated.

      Roast the Cauliflower: Spread the seasoned cauliflower on the prepared baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until golden brown and tender, tossing halfway through.

        Season the Chickpeas: In a separate bowl, toss the chickpeas with the remaining tablespoon of olive oil, lime juice, and a pinch of salt and pepper. Once the cauliflower is done roasting, add the chickpeas to the baking sheet and roast for an additional 10 minutes.

          Prepare the Wraps: While the chickpeas and cauliflower are roasting, warm the tortillas on a skillet or in the microwave until soft and pliable.

            Assemble the Wraps: Lay a warm tortilla flat on a plate. Begin layering with a handful of shredded red cabbage, followed by a generous scoop of the roasted chickpea and cauliflower mixture, and a few slices of avocado.

              Garnish and Serve: Sprinkle with fresh cilantro, drizzle with additional lime juice, and wrap it up tightly. Serve immediately with lime wedges on the side.
