Ingredients

For the Ramen:

2 packs of ramen noodles (discard seasoning packets)

1 lb boneless, skinless chicken thighs, sliced

2 tablespoons sesame oil

1 tablespoon soy sauce

1 tablespoon Sriracha (adjust for spice preference)

2 cups chicken broth

1 cup water

1 cup sliced mushrooms (shiitake or button)

1 cup baby spinach

2 green onions, chopped

2 soft-boiled eggs (1 per serving)

For the Creamy Garlic Sauce:

3 tablespoons butter

6 cloves garlic, minced

1 tablespoon all-purpose flour

1 cup heavy cream

½ cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and pepper to taste

Optional: red pepper flakes for added heat

Instructions

Prepare the Chicken:

    - In a medium bowl, combine sliced chicken thighs, sesame oil, soy sauce, and Sriracha. Let it marinate for at least 15 minutes while you prepare the other ingredients.

      Make the Creamy Garlic Sauce:

        - In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant (about 1-2 minutes).

          - Sprinkle in the flour and whisk continuously for about 1 minute to create a roux.

            - Slowly pour in the heavy cream while whisking to avoid lumps. Continue to cook until the sauce thickens (about 3-5 minutes).

              - Stir in the Parmesan cheese and lemon juice, mixing until smooth. Season with salt, pepper, and optional red pepper flakes to taste. Remove from heat and set aside.

                Cook the Ramen:

                  - In a large pot, heat a tablespoon of oil over medium-high heat. Add the marinated chicken and sauté until fully cooked (about 5-7 minutes). Remove the chicken and set aside.

                    - In the same pot, add chicken broth and water, bringing it to a simmer. Add sliced mushrooms and allow them to cook for about 3 minutes.

                      - Stir in the ramen noodles and cook according to package instructions (usually about 3-4 minutes).

                        - During the last minute of cooking, add the baby spinach until wilted.

                          Assemble the Dish:

                            - Divide the ramen and broth among bowls, then top with the sautéed chicken, a soft-boiled egg halved, and a drizzle of creamy garlic sauce.

                              - Garnish with chopped green onions and an extra sprinkle of red pepper flakes if desired.

                                Enjoy:

                                  - Serve hot and enjoy your deliciously spicy chicken ramen with a creamy garlic twist!
