Ingredients
  

1 lb ground beef or turkey

1 onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes (with juice)

1 cup frozen diced potatoes

1 cup shredded cheddar cheese

1 packet taco seasoning

1 tsp cumin

Salt and pepper to taste

Optional toppings: sour cream, green onions, avocado, cilantro

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey with the diced onion and minced garlic. Cook until the meat is fully cooked and the onions are translucent. Drain any excess grease.

    Mix Ingredients: In the slow cooker, combine the cooked meat mixture, black beans, corn, diced tomatoes (with their juice), frozen diced potatoes, taco seasoning, cumin, salt, and pepper. Stir well to combine all the ingredients.

      Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the flavors are well incorporated.

        Add Cheese: About 15 minutes before you’re ready to serve, sprinkle the shredded cheddar cheese over the top of the casserole. Cover and allow the cheese to melt.

          Serve: Once done, ladle the casserole into bowls and top with optional garnishes like sour cream, chopped green onions, diced avocado, and cilantro. Enjoy your Cowboy Casserole!
