Preheat a skillet or griddle over medium heat.
Lay out the ciabatta slices on a clean surface. Spread a thin layer of pesto sauce on two of the slices.
On top of the pesto-spread slices, layer the fresh mozzarella, followed by the prosciutto or salami, tomato slices, fresh basil leaves, and a sprinkle of salt and pepper.
Top with the remaining ciabatta slices to form two sandwiches.
Brush the outside of each sandwich with olive oil to ensure a golden finish.
Place the sandwiches on the preheated skillet or griddle. Cook for about 3-4 minutes on each side, or until the bread is toasted and the cheese is melted.
Once cooked, remove the sandwiches from the skillet. If desired, drizzle with balsamic glaze for added flavor.
Slice in half, serve warm, and enjoy your toasted Italian delight!
