Ingredients

1 cup cottage cheese

4 hard-boiled eggs, diced

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 tablespoon fresh chives, chopped

1 tablespoon fresh dill, chopped

Salt and pepper to taste

1 celery stalk, finely chopped

1/4 red onion, finely chopped

Optional: leaf lettuce or whole-grain bread for serving

Instructions

In a large mixing bowl, combine the cottage cheese, mayonnaise, and Dijon mustard. Stir until well mixed and creamy.

Add the diced hard-boiled eggs, chopped celery, and red onion to the bowl. Gently fold the ingredients together to avoid breaking the eggs too much.

Sprinkle in the fresh chives, dill, salt, and pepper. Mix everything until thoroughly combined. Taste and adjust seasoning as needed.

Refrigerate the egg salad for at least 30 minutes to allow the flavors to meld.

Serve on a bed of leaf lettuce or use it as a filling for whole-grain bread, creating delicious sandwiches.
