Simple Beef & Cheese Enchiladas for Cozy Nights

1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (10 oz) enchilada sauce (divided)

8 small flour tortillas

2 cups shredded cheese (cheddar or Mexican blend)

1 cup black beans, rinsed and drained

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. As it begins to brown, add the chopped onion and minced garlic. Cook until the meat is browned and the onion is translucent, about 5-7 minutes.

      Season the Beef: Sprinkle in the cumin, chili powder, salt, and pepper. Stir to combine, then mix in the black beans and half of the enchilada sauce (reserve the remaining sauce for topping the enchiladas). Let the mixture simmer for 2-3 minutes.

        Fill the Tortillas: Spread a thin layer of the remaining enchilada sauce in the bottom of a 9x13 inch baking dish. Take a tortilla and spoon 2-3 tablespoons of the beef mixture onto the center. Top with a generous tablespoon of cheese. Roll the tortilla tightly and place seam side down in the baking dish. Repeat for all tortillas.

          Top with Sauce and Cheese: Once all the filled tortillas are in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the remaining cheese over the sauce.

            Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and let the enchiladas sit for 5 minutes. Garnish with fresh cilantro and serve warm with sour cream on the side if desired.
