1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon cayenne pepper (optional)

8 mini Belgian waffles (store-bought or homemade)

4 tablespoons maple syrup

4 tablespoons butter, melted

Fresh chives, chopped (for garnish)

Powdered sugar (for dusting)

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs and coat them well. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

    Prepare the Waffles: If making homemade waffles, prepare the batter and cook them using a mini waffle maker according to manufacturer instructions. If using store-bought, just have them ready.

      Bread the Chicken: In a separate bowl, mix together the flour, baking powder, cayenne pepper, and a pinch of salt. Remove the marinated chicken from the fridge, shaking off excess marinade, and dredge each piece in the flour mixture until well coated.

        Fry the Chicken: Heat oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully add the breaded chicken thighs. Fry for about 4-5 minutes on each side or until golden brown and fully cooked. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C). Once cooked, set aside on paper towels to drain excess oil.

          Assemble the Sliders: Take one mini waffle, drizzling it lightly with melted butter, followed by a piece of fried chicken. Drizzle about a teaspoon of maple syrup on top and finish with another mini waffle to create a slider. Repeat with the remaining ingredients.
