1 ½ cups crushed shortbread cookies (like Lorna Doone)

½ cup unsweetened shredded coconut, toasted

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, at room temperature

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs, at room temperature

½ cup sour cream

½ cup unsweetened shredded coconut

½ cup caramel sauce (store-bought or homemade)

For the topping:

½ cup unsweetened shredded coconut, toasted

½ cup chocolate ganache (made from melting chocolate and cream)

¼ cup caramel sauce for drizzling

Instructions
 

Preheat the oven: Preheat your oven to 325°F (160°C).

    Prepare the crust: In a mixing bowl, combine the crushed shortbread cookies, toasted coconut, melted butter, and granulated sugar. Mix until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan, going slightly up the sides. Bake for 10 minutes, then remove and let cool.

      Make the cheesecake filling: In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth and fluffy (about 2-3 minutes). Gradually add the granulated sugar, mixing until well combined. Add the vanilla extract and mix in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.

        Combine ingredients: Gently fold in the sour cream, shredded coconut, and caramel sauce until just blended.

          Bake the cheesecake: Pour the cheesecake filling over the cooled crust, smoothing the top. Bake in the preheated oven for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour.

            Chill the cheesecake: Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

              Prepare the toppings: Before serving, top the cheesecake with toasted coconut. Drizzle with chocolate ganache and additional caramel sauce to mimic the flavors of a Samoa cookie.
