Ingredients
  

For the crust:

1 ½ cups all-purpose flour

⅓ cup granulated sugar

½ teaspoon salt

½ cup unsalted butter, chilled and cubed

1 large egg yolk

2 to 4 tablespoons ice water

For the filling:

8 ounces dark chocolate (70% cocoa), chopped

½ cup heavy cream

½ cup whole milk

3 large eggs

½ cup granulated sugar

1 teaspoon vanilla extract

½ teaspoon flaky sea salt (for topping)

Instructions
 

Make the crust:

    - In a large bowl, whisk together the flour, sugar, and salt.

      - Add the chilled butter and mix using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - In a small bowl, whisk the egg yolk and 2 tablespoons of ice water. Gradually add this to the flour mixture, mixing until the dough comes together. If too dry, add more ice water, one tablespoon at a time.

          - Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

            Preheat the oven:

              - Preheat your oven to 350°F (175°C).

                Prepare the tart crust:

                  - On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press it into the pan and trim any excess. Prick the bottom with a fork.

                    - Line the crust with parchment paper and fill it with pie weights or dried beans.

                      - Bake for 15 minutes, then remove the weights and parchment. Bake for an additional 10-12 minutes until lightly golden. Let it cool completely.

                        Prepare the chocolate filling:

                          - In a small saucepan, heat the heavy cream and whole milk over medium heat until it just begins to simmer. Remove from heat.

                            - Add the chopped dark chocolate to the warm cream mixture and let it sit for 5 minutes. Stir until smooth.

                              - In a separate bowl, whisk together the eggs and sugar until pale and combined. Gradually whisk in the chocolate mixture and vanilla extract until fully combined.

                                Assemble and bake:

                                  - Pour the chocolate filling into the cooled tart crust and spread it evenly.

                                    - Bake for 20-25 minutes, or until the filling is set but slightly jiggly in the center. Remove from the oven and allow to cool to room temperature.

                                      Garnish:

                                        - Before serving, sprinkle the flaky sea salt generously over the top of the tart.

                                          Serve:

                                            - Slice the tart and enjoy it with fresh berries or a dollop of whipped cream if desired.
