1 pint fresh strawberries, hulled and halved

1 tablespoon honey

1 tablespoon balsamic vinegar

1 cup ricotta cheese

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 tablespoons powdered sugar (adjust to taste)

4 slices of crusty bread (like sourdough or ciabatta)

Fresh mint leaves for garnish

Pinch of salt

Optional: balsamic glaze for drizzling

Roast the Strawberries: Preheat your oven to 400°F (200°C). In a baking dish, combine the halved strawberries, honey, balsamic vinegar, and a pinch of salt. Toss well to coat. Roast in the preheated oven for 15-20 minutes, or until the strawberries are soft and caramelized. Remove from the oven and let cool slightly.

    Prepare the Whipped Ricotta: In a medium mixing bowl, combine the ricotta cheese, lemon juice, vanilla extract, and powdered sugar. Using an electric mixer or a whisk, blend until the mixture is smooth and fluffy. Taste and adjust sweetness with more powdered sugar if desired.

      Toast the Bread: While the strawberries are roasting, heat a skillet or grill pan over medium-high heat. Lightly toast the slices of bread on both sides until golden and crisp. You can also use a toaster if you prefer.

        Assemble the Toasts: Spread a generous layer of the whipped ricotta on each slice of toasted bread. Top with the roasted strawberries, allowing some of the juices to drizzle over the cheese.

          Garnish and Serve: Garnish with fresh mint leaves and, if desired, drizzle with balsamic glaze for extra flavor. Serve immediately while the toast is still warm.
