Ingredients
  

1 cup fresh raspberries (or frozen, thawed)

8 oz semi-sweet chocolate, chopped

1/2 cup heavy cream

2 tbsp unsalted butter

1 tsp rose water

1/4 cup powdered sugar (optional, for rolling)

1/4 cup unsweetened cocoa powder (optional, for rolling)

Edible rose petals (for garnish, optional)

Instructions
 

Prepare the Raspberry Puree: In a blender, puree the fresh raspberries until smooth. Strain through a fine-mesh sieve to remove seeds, pressing with a spatula if needed, until you have about 1/2 cup of raspberry puree.

    Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not boil.

      Melt the Chocolate: Remove the saucepan from heat. Add the chopped chocolate and butter to the cream, stirring until completely melted and smooth.

        Mix in Raspberry and Rose: Incorporate the raspberry puree and rose water into the melted chocolate mixture, stirring gently until well combined.

          Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the chocolate mixture for about 2 to 3 hours, or until firm enough to scoop.

            Form the Truffles: Using a small cookie scoop or your hands, scoop out portions of the chilled chocolate mixture and quickly roll them into balls about 1 inch in diameter.

              Coat the Truffles: In separate bowls, place the powdered sugar and unsweetened cocoa powder. Roll half of the truffles in powdered sugar and the other half in cocoa powder until fully coated.

                Garnish: If desired, place edible rose petals on top of each truffle for an elegant touch.
