1 cup fresh raspberries (plus extra for garnish)

2 tablespoons sugar (adjust to taste)

1 cup sparkling water (chilled)

1 cup heavy cream

1 teaspoon vanilla extract

Ice cubes

Fresh mint leaves (for garnish)

Instructions
 

In a small saucepan over medium heat, combine the fresh raspberries and sugar. Cook for about 5-7 minutes, stirring gently until the raspberries break down and the mixture becomes syrupy. Remove from heat and allow to cool slightly.

    Strain the raspberry mixture through a fine mesh sieve to remove the seeds, pressing down to extract as much juice as possible. Set the raspberry syrup aside.

      In a mixing bowl, whisk together the heavy cream and vanilla extract until soft peaks form. This will give your cream soda a lovely, fluffy texture.

        In serving glasses, add ice cubes to about halfway. Pour the raspberry syrup evenly over the ice.

          Slowly top each glass with chilled sparkling water, filling the glass until almost full. Stir gently to mix the raspberry syrup with the sparkling water.

            Spoon the whipped cream over the top of each glass, creating a lovely float effect.

              Garnish with extra raspberries and a sprig of fresh mint for a pop of color and freshness.
