Ingredients

4 ripe peaches, peeled and diced

2 cups heavy cream

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional: ¼ cup chopped fresh mint for garnish

Instructions

Prepare the Peaches: In a blender or food processor, combine the diced peaches, lemon juice, and a pinch of salt. Blend until smooth, leaving some small chunks for texture.

Whip the Cream: In a large mixing bowl, pour in the heavy cream. Using an electric mixer, beat the cream on medium-high speed until stiff peaks form. This should take about 3-5 minutes.

Mix the Ingredients: In another bowl, mix together the sweetened condensed milk and vanilla extract until combined. Gently fold the whipped cream into the condensed milk mixture until just blended.

Combine Peaches and Cream Mixture: Carefully fold the peach puree into the cream mixture, ensuring it remains light and fluffy. If desired, you can leave some swirls of peach for visual appeal.

Freeze: Transfer the mixture into an airtight container. Spread it evenly and smooth the top. Cover with a lid or plastic wrap, and freeze for at least 4 hours or until solid.

Serve: Once frozen, scoop the ice cream into bowls and garnish with fresh mint if desired. Enjoy your homemade summer delight!
