Ingredients
  

1 lb ground beef (80/20 blend)

1 small onion, thinly sliced

2 tablespoons butter

4 slices of rye bread

4 slices American cheese (or Swiss cheese)

Salt and pepper, to taste

1 tablespoon Worcestershire sauce

½ cup mayonnaise

1 tablespoon ketchup

1 teaspoon Dijon mustard

Pickles (optional, for garnish)

Prepare the Secret Sauce: In a small bowl, mix together the mayonnaise, ketchup, and Dijon mustard. Set aside.

    Cook the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and sauté until they are golden brown and caramelized, about 10-15 minutes. Stir occasionally to prevent burning. Set aside.

      Form the Patties: In a mixing bowl, combine the ground beef with Worcestershire sauce, salt, and pepper. Form into two equal patties.

        Cook the Patties: In the same skillet, add the remaining tablespoon of butter over medium-high heat. Cook the patties for about 3-4 minutes on one side, then flip and place a slice of cheese on each patty. Cook for another 3-4 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

          Assemble the Patty Melts: Spread the secret sauce on one side of each slice of rye bread. On two slices, place the cooked patties with melted cheese, top with caramelized onions, and then cover with the remaining bread slices.

            Grill the Sandwiches: Wipe the skillet clean and place over medium heat. Grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and crispy.

              Serve: Remove from the skillet, slice the patty melts in half and serve hot with pickles on the side if desired.
