In a shallow bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and maple syrup (if using) until well combined.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
Dip each slice of bread into the egg mixture, ensuring both sides are well-coated, but not so soaked that they fall apart.
Place the coated bread slices onto the heated skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through.
Remove the French toast from the skillet and keep warm while you cook the remaining slices.
Serve the French toast warm, topped with your choice of fresh fruit and a dusting of powdered sugar if desired.
