Ingredients
  

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs)

1 cup cooked breakfast sausage or bacon, crumbled

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

Salt and pepper to taste

Cooking spray or a tablespoon of olive oil

Optional toppings: salsa, avocado slices, sour cream, or jalapeños

Instructions
 

Prepare the Ingredients: If not pre-cooked, scramble the eggs in a medium bowl and season with salt and pepper. Cook the eggs in a non-stick skillet over medium heat until just set. Set aside.

    Cook the Veggies: In the same skillet, add a little olive oil or cooking spray. Sauté the diced bell peppers and onions until they are softened and slightly caramelized, about 3-4 minutes.

      Combine Fillings: In a large bowl, mix the scrambled eggs, crumbled sausage or bacon, sautéed veggies, and half of the cheese until well combined.

        Assemble Quesadillas: Heat another larger skillet over medium heat. Place one tortilla in the skillet, and top it with a generous amount of the egg mixture, spreading it evenly. Sprinkle the remaining cheese on top and cover with another tortilla.

          Cook Until Crispy: Cook for about 2-3 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula and cook the other side for an additional 2-3 minutes until golden brown and crispy.

            Repeat: Remove from the skillet and repeat the process with the remaining tortillas and filling.

              Slice and Serve: Cut the quesadillas into wedges and serve warm with your choice of salsa, avocado, sour cream, or jalapeños.
