Ingredients
  

1 cup canned pumpkin puree

1 cup canned chickpeas, rinsed and drained

1/4 cup tahini

2 tablespoons olive oil

2 tablespoons lemon juice

2 garlic cloves, minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1-2 tablespoons water (if needed for consistency)

Pumpkin seeds and fresh parsley for garnish

Instructions
 

In a food processor, combine the pumpkin puree, chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, smoked paprika, salt, and pepper.

    Blend until smooth and creamy, scraping down the sides as needed. If the hummus is too thick, gradually add water until your desired consistency is reached.

      Taste and adjust seasonings as necessary, adding more salt, lemon juice, or spices to suit your taste.

        Transfer the hummus to a serving bowl. Drizzle a little olive oil on top and garnish with pumpkin seeds and fresh parsley.

          Serve with pita chips, fresh vegetable sticks, or use as a spread on sandwiches.
