1 (15 oz) can pure pumpkin puree

1 (12 oz) can evaporated milk

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice

1 box (15.25 oz) yellow cake mix

1 cup chopped pecans (or walnuts)

1 cup unsalted butter, melted

1 cup sweetened shredded coconut (optional)

Whipped cream, for serving

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, granulated sugar, eggs, vanilla extract, and pumpkin pie spice until smooth.

      Pour the pumpkin mixture into the prepared baking dish, spreading it evenly.

        Sprinkle the dry yellow cake mix evenly over the pumpkin layer, covering it as much as possible.

          In a separate bowl, mix the melted butter with the chopped pecans and shredded coconut (if using). Drizzle this mixture over the cake mix.

            Use a spatula to gently spread any remaining butter evenly on top.

              Bake for 50–60 minutes, or until the cake is set in the center and the top is golden brown and crunchy.
