For the Crumble Topping:

1/2 cup all-purpose flour

1/2 cup oats (quick or rolled)

1/4 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 cup unsalted butter, melted

A pinch of salt

Optional Glaze:

1/2 cup powdered sugar

1-2 tablespoons milk

1/4 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Make the Cookie Dough: In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Beat until light and fluffy. Add in the pumpkin puree, egg, and vanilla extract. Mix until fully combined.

      Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

        Prepare the Crumble Topping: In a separate bowl, mix the flour, oats, brown sugar, cinnamon, and salt. Drizzle the melted butter over the mixture and stir until crumbs form.

          Assemble the Cookies: Using a cookie scoop or spoon, drop dollops of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Generously sprinkle the crumble topping over each cookie.

            Bake the Cookies: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but will firm up as they cool.

              Cool: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
