1 cup rolled oats

1 cup cottage cheese (or Greek yogurt for a dairy-free alternative)

4 large eggs

1 scoop vanilla whey protein powder (or plant-based protein)

2 tablespoons almond flour (optional, for extra texture)

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Cooking spray or coconut oil (for greasing the waffle iron)

Instructions
 

Blend the Oats: Place the rolled oats in a blender or food processor and blend until they reach a fine flour consistency.

    Combine Ingredients: In a mixing bowl, combine the oat flour, cottage cheese, eggs, protein powder, almond flour, baking powder, vanilla extract, cinnamon, and salt. Mix until you have a smooth batter. If the batter is too thick, add a splash of water or milk of choice to reach your desired consistency.

      Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions, and lightly grease it with cooking spray or coconut oil.

        Cook the Waffles: Pour about 1/2 cup of the batter onto the preheated waffle iron (adjust depending on your waffle maker’s size). Close the lid and cook for about 4-6 minutes, or until the waffles are golden brown and crisp.

          Serve: Carefully remove the waffles from the iron and serve immediately. Top with your favorite toppings such as fresh berries, nut butter, maple syrup, or yogurt for added flavor and nutrition.
