Prepare the Pineapple Puree: In a blender, combine the fresh pineapple chunks, honey/agave syrup, and 1/2 cup of coconut water. Blend until smooth. If the mixture is too thick, add more coconut water until it reaches your desired consistency.
Prepare the Strawberry Puree: In a separate blender, combine the sliced strawberries, honey/agave syrup, and the remaining 1/2 cup of coconut water. Blend until smooth. Again, add more coconut water if needed for a smoother texture.
Create the Slush Mix: In a large bowl, mix the ice cubes with the pineapple puree until well combined. Repeat with the strawberry mixture in another bowl.
Swirl the Mixtures: In serving glasses or a pitcher, alternate layers of the pineapple slush and strawberry slush. Use a spoon or a straw to gently swirl the two mixtures together to create a beautiful marbled effect.
Serve and Garnish: Pour the slushies into glasses, and if desired, garnish with fresh mint leaves for a pop of color and added freshness.
